Tenderness Rule of Thumb

The further a cut is from Hoof, Horn, and Hip the more Tender the meat. BUT less tender cuts often have more flavor.

Beef Cutting Instructions are expected to be in within 14 days of slaughter. 
There will be a $50.00 Aging fee applied to any late instructions. After 21 days A standard cut will be applied to any without instructions.


Pork and Lamb instructions are expected to accompany the animal in. Be here before the animal gets here, or come in same day the animal does.
