Tenderness Rule of Thumb

The further a cut is from Hoof, Horn, and Hip the more Tender the meat. BUT less tender cuts often have more flavor.

Cutting Instructions are expected to be in within 3 days of slaughter. 
There will be a $50.00  fee applied to any late instructions.
After 14 days A standard cut will be applied to any without instructions.
